I need to whip something up quick for KJK’s little sweet tooth and noticed this decadent delight on Kraft’s website. It was really, really easy to make. I wasn’t a big fan of the cake, but the part with frosting was amazing. I decided that next time I will make it in 3 layers so there will be even more frosting.

In the summertime, online classes just kill my soul. I’ll do anything. Absolutely anything to avoid posting another two paragraph, graduate level, blah, blah, blah!!! So when I’m hanging at Kevin’s, I have been trying some rocking new recipes. This usually involves travelling to the illustrious Midtown Foods for supplies. I spend so much time in the grocery store that the clerks start asking me if they can help me find something. Nope. Just perusing. Really, it’s no problem that I’ve inspected the three varieties of tortillas six times. It’s an honest problem. I’m trying to choose between making wraps or salads. It could happen to anyone!

Here are a few of the recipes I’ve tried making for the BBFE this summer:

The Best Carrot Cake Ever

Verdict: It is! It is! It’s luscious! I would reccomend roping an unsuspecting younger sibling into peeling carrots though. It’s a pain.
Mods: Didn’t use salt because we lost it on the Kreisel family campout. Didn’t use pecans because I’m not nuts about them. Hehe.

2. Ginger-Peanut Chicken-Salad Wraps

Verdict: Finally, I made something healthy! It got rave reviews. I didn’t enjoy using the food processor, but that’s just because it’s stored in a very awkward place in the kitchen.
Mods: Many. In fact. Take away the word “ginger” and take away the word “wrap.” The only ginger I could find was this weird crystallized stuff. And I wasn’t a big fan of the tortilla selection. Also, I cooked the chicken by shoving it in the oven rather than the pan-fry method. I’ll do anything to avoid touching raw meat.

3. Taco Pizza

Verdict: This is what Kevin got on his actual birthday. Man, that boy is spooooiled. I had almost decided to just order pizza. And then I was like, wow, I wonder if I can make taco pizza. Turns out, I can!
Mods: Umm… I used ground beef. Why would I use pork? That’s just weird. Also, I traded the olives for jalapenos. Just preference.

4. Pioneer Woman’s Lasagna

Verdict: Kevin and I ate this on a Friday night after a 9-mile run. ANYTHING would’ve tasted good. To be honest, I was very impressed with myself for making it. It looked amazing. Like it was from a restaurant. However, not a big fan of all that meat! I would definitely use less next time.
Mods: Speaking of less meat, I already used -.5lbs of ground beef. I also totally just forgot the shredded Parmesan cheese that was supposed to be infiltrating somewhere in the middle. Ah, well. It was tasty!

5. Tasty Kitchen Apple Crisp

Verdict: Ayiyi! Who knew Apple Crisp took an hour to cook? I have to get Kevin’s lunch ready by noon! Or else! You know he gets angry when he doesn’t eat. Haha. Wait. That’s me. Once again, did not enjoy peeling the apples. But it was made a little nicer by The Weepies new single Be My Thrill. I listened to it 6-8 times while preparing this.
Mods: I halved the recipe. I think next time I would use more brown sugar. Just because I think that’s the way my mom made it when I was a kid. But Kevin James ate the entire thing between Friday lunch and Sunday breakfast. No complaints there!

6. Our Best Bites Pizza Rolls

Verdict: I have eaten way too many pizza rolls from the little yellow bags this summer. I was nervous to make these because it involved using yeast which has been antagonistic towards me in the past. But this was a success! A delicious! Yummy. Cheesy. Success.
Mods: Followed it carefully, except I kinda stunk at making the rolls look cute. I made this again the next day with my baby sisters. Even they ate it. That’s saying something! They only eat spaghetti and pizza.

7. Flour Frosting

Verdict: Sounds weird, right? It turned out dreamy and tasting like cotton candy. Sugary. I used this for 72 cupcakes for Kevin’s birthday party.
Mods: None. I doubled the recipe. This recipe rocks because it uses things you would definitely have just hanging out in your cupboards. And that’s beneficial when it 11pm on a Thursday night you promised your eighth grade choir students cupcakes!

8. Panini Happy

Verdict: Pretty delightful. I used this blog as a guide to help me choose some ingredient ideas for PANINIS. I decided to use the prepared pizza crust as one of my bread choices. That turned out REALLY well. I also used a mini loaf of French bread to make just grilled cheese.
Mods: Well. Everything was really a mod. I also used chicken, sun-dried tomatoes, jalapenos, pepperjack, mozzarella, and whatever else was in the kitchen door. Loved it.

Domestic Goddess, I know. And nobody say anything about the German Chocolate Cake Debacle, please! That’s on my list to learn how to make in July. Also overnight cinnamon rolls.
